Who the hell makes 3 muffins out of a full package of Jiffy Mix.
Btw making chili leftover chopped beef taco meat seems to have been a stroke of genius by Mrs. Vondon302.
Speaking of pancakes this is my go to.

If you make them the size of those big ass muffins from the bakery or supermarket, you’ll probably only get 3 muffins out of a single box.
Jiffy corn muffin mix is mostly used as a cheap substitute for pancake mix . I didn’t think anybody actually made muffins with it.
They also have a blueberry muffin mix.

Homemade chili with corn muffins sounds really good right now...
Also, I’ve made the “Johnny Cake” recipe with their mix before, which is basically putting all the muffin batter into an 8” square pan.

Jiffy mix is always my go-to for homemade corn muffins. I almost always have them with homemade chili.
The idea of using this mix for pancakes is intriguing...

Boxed mix pancakes are pretty silly to me.
What is this, just a box of flour then with all the stuff I gotta add??? They do taste pretty good but it made sense considering I added everything I normally do when I make them from scratch. I was out of flour and wanted pancakes so I didnt have much choice. I usually just use bisquick for breading chicken. That comes out pretty darn good!
Kodiak cakes arent bad though, Ive bought their frozen waffles and thought they were pretty good. So the box mix has to be better and they seem healthy.

They got recipe for parmesan herb biscuits on the back that sounds delicious. I really like the Kodiak mix, bought it on a whim at Costco.

Remaining (leftover?) taco meat goes in the small Dorito’s bag for walking tacos around here. Portable and tasty!
